Ready to go mechanical infantry style cheap melamine plates are lined up with chutney waiting for Dosas to be topped over. An assortment of veggies, oil, noodles, butter, spaghetti, cheese, paneer, masalas are lined up next to him as his foot soldiers. Two jars of chutney; a red spicy garlic and a lighter green coconut based are constantly filled up by one of the assistants hovering near our chef. 2-3 other staff take the orders and deliver the plates to your waiting hands.
The paneer chilli Dosa starts with soft white paneer cubes, lots of spices, tomatoes and onion mixed up and suddenly an orange gravy from thin air is created and heaped on to the plate next to the Dosa. It is spicy and my group loves it, but I am not able to savour enough of the paneer flavour.
