Ingredients
1 Kg mutton(I prefer leg piece)
1 cup sliced onions
1/2 cup finely chopped tomatoes
1 Tbsp garlic paste
1 Tbsp ginger paste
6 green chilies slit
1 tsp chili powder
1 Tbsp dhania powder
1/2 tsp haldi
1 small piece of cinnamon
6 cloves
1-2 big elaichi
1-2 small elaichi
1 tsp black peppercorns
1-2 tej pattas
1 small piece of jai phul
1 small piece of jai vatri
Optional: a Tbsp of crushed poppy seeds
A handful of chopped green coriander leaves
Salt
1 cup oil
Method
Heat the oil and add the finely sliced onions. Fry on high fire for about 5 minutes, taking care not to burn the onions. Continue on a lower flame until the onions are nicely browned. You can add the salt at this point(about a tsp) to hasten the process.
Add the sabut garam masalas(elaichi, dalchini, laung, tej patta, pepper.).
Add the chopped tomatoes and green chillies and fry for about 5 minutes. Keep stirring to avoid burning.
Add the powders after making a paste of them in some water and fry for a couple of minutes.
Add the ginger-garlic pastes and fry until the raw smell goes.
Add the mutton and stir until the pieces are well coated. At this point you can add the poppy seeds paste.
Add enough water to cover the pieces and pressure cook for 2-3 whistles.
Serve garnished with green dhania leaves.
Goes well with rice/rotis.
You can add potatoes if you like.
This can also be made with chicken.
Reduce the chilies and chili powder if you cannot take spicy food.
