Indian food has a unique peculiarity and is widely spread. It is an exotic treat which is never to be missed. Indian cuisine is blend of different culture of at least billion people; one can just imagine the vastness behind the history of the Indian cuisines which rules the planet in the World culinary market.  Spicy and sweet, colorful and vibrant, every state has some or the other specialties ranging from simple staple food to the exotic meals. Leaves you licking those fingers, though bad manners but would you leave behind the tasty gravy in your fingers and just forget it? Never, such sumptuous meals also leave behind even the flavor in your hands, isn’t that great. First have great Indian food then go home taking flavors as souvenirs.


Now the weather of four territories North, East, West and South is different from one another, and one can easily find differences in tastes and food preparation as suited by them. Hence, it’s quite obvious that in Gujarat you will not find people eating loads of rice and in Andhra Pradesh people eating food prepared from wheat. That cannot be possible considering the behaviors and style of people. Now what is unique is that almost all the spices used in Indian food are just same. And again it is known fact that these spices are again known for its medicinal purposes, like, ginger which is widely used for tea preparation which helps in treating cold and a garlic which helps to keep that heart healthy and beat normally. Spices like cardamom, pepper, asafetida, jeera, etc are all used for medicinal purposes.


Starting from North which has a wide variety of rich food people here tend to use butter, ghee, milk and milk products extensively. As the weather is relatively cooler hence such rich products keeps the inner body warm and provides the stored energy throughout the day. Also there are good numbers of meat eaters who love to blend their meat with exotic spices and make it hotter in a Tandoor(a special kind of oven where heated coal is used to cook food). The specialty of North cuisine is incomplete without their very own Chicken Tandoori and curries which is world famous. Now in the North east region you will find people enjoying heavy portions of rice due to good rainfall which they enjoy every year. East is east and without their famous fish and vegetables their meals will remain incomplete and also they have variety of sweets which are just too good, like the rosogullas, mishti dahi, etc. Yes all of you must have guessed it right I am talking about Bengal region in the east for its very famous sweets and savories. Now Bengal uses Mustard seed oil in their food which brings out that unique sweet smell and your taste buds get that spicy touch.


Coming down to South region, out here mainly people have rice in their meal which also contributes to a major portion. Here from breakfast to desserts rice is extensively used. Now it is not surprising to find coconut oil being used for cooking purpose and the raw coconut itself used in various other preparations which is served as chutney or a masala. Nobody can forget those lovely idli and dosas and those steaming upmas. Fish also plays a major role in the diet, especially for people living in the coastal areas where abundant quantities of variety of fish are available. Out here people also follow a tradition of eating in leaves which is different from other regions and spoons and forks are not used at all but they love to eat it with their very own hands. Coming to the Western region mainly surrounded by coastal areas. Now this region stretches from Goa to the Gujarat and Maharashtra in between all of them being different from one another, though one can find hints of similarities in the method of cooking. Goa has a huge population of sea food eaters and so does Maharashtra, hence one can find people relishing fish, prawns, lobsters, crabs, etc which are also delicacies in some parts in the Western region. On the upper side Gujarat who comparatively enjoys less of rainfall, out here people use dal and pickles which substitute the vegetables which are not available so abundantly.


Today, in India modernization of the Indian food has played a tremendous role in developing the new tastes of Indian people who are even starting to experiment on new ingredients and method of preparations. People also recognize the street food and find it interesting. This is growing trend in the last decade where even Indian street foods have marked their entry in specialty restaurants. No doubt they are tasty but hygienically speaking not as palatable as the food served in a restaurant but eventually they make good business. So it is not a big deal to see people eating bhel puri, Pav bhaji, puchkas, chaats, etc and enjoying it even more than they do in a restaurant. Welcome to India!


I will give a basic idea about the kind of food people eat in different regions,


NORTH


Punjab:  As I mentioned earlier Punjabis love their makke di roti with sarson da saag, raajma chawal, butter chicken, topped with a blog of butter and finish it with Lassi.


Rajasthan: Now they enjoy eating gate ki subzi, mangodi ki sabzi, gate ka pulao, daal bati which is so relishing and sweets like mawa katchori and ladoos.


Lucknow: Now this city is famous for biryanis and different types of meat preparations also kebabs are also considered as delicacies.


Also there are other cuisines like the Kashmiri and Awadh which are also well renowned.


EAST


Bengal and Assam are also unique in their foods and have different cooking styles.


Bengal: Fish and sea food are widely used in Bengal hence Macher Jhol and Doi mach are just one of the delicacies and also one can relish mishti doi and sondesh which are world famous, Bengali sweets are just great.


WEST


A bit biased because I completely belong to this region but still will give you right information


Gujarat: Now this is the place for vegetarian eaters who extensively use spices and different textures for preparing food and they are also famous in preparing farsans which generally include fried items. Dishes like dal dhokli, undhiyu, kadhi, rotla, are my favorites.


Maharashtra: This cuisine is so vast that there is a lot of fusion involved in food prepared, a simple example being puran poli which is same but made in different manner in both Gujarat and Maharashtra. Also this place ruled by Marathas and a long coast line they also enjoy eating sea food.


Goa: Goan food has captured the hearts of all the sea food lovers throughout the country, where fish, prawns, pork and chicken are eaten quite frequently and who can forget those lovely cakes.


SOUTH


Andhra Pradesh, Tamil Nadu, Hyderabad, etc are all standing like a wall when it comes to their food history and culture.


Being vast and its so deep that I will explain in short about this excellent culinary treats which include Rice, Sambar and dal which are eaten frequently in Andhra and also idli and wada sambhar which is just amazing. Shifting to Hyderabad which are world renowned for their Biryanis prepared by amalgamation of spices and meats which are marinated and cooked with rice which are set in layers cooked in dum(A kind of cooking technique where Dough is used to cover the vessel while the rice is being cooked).  Last but not the least coming to Tamil Nadu where generous amounts of spices are used to make food and also papads, appams, pickles has their own mark in the Tamil Nadu cuisine. Of course there are other places like Kerala which are also quite famous.


I am surprised to find just a couple of reviews on such a lovely topic, I mean isn’t it good to read about something which is our own or something which is materialistic and does not belong to our own country or area.
