Down south, one of the popular traditional dishes served for wedding-receptions and parties, is a rice delicacy called Idiyappam, or Rice String Hoppers.
It looks like noodles, but is much softer and breakable and tastes entirely different. Each person has their own idea as to what goes best with it. Some enjoy eating it with Kerala fish or chicken curry, while others like having it with ripe plantain and sugar. Personally, we enjoy it with sweet coconut milk!
It's a bit difficult to make. I have had quite a few disasters. The water has to be boiling hot before you mix it with rice flour to knead. High chances of getting burned or the idiyappam not coming out right.
