Cauliflower Palak . Two of my favorite veggies in a dream combination . Now this dish would suffice for 2 to 3 people.
You will need 1 small to medium size cauliflower , 2 Bunches Palak Leaves , 1 medium Onion , 2 cloves of garlic 1 clove finely chopped, 1 '' of Ginger finely chopped, 1 small Tomato ( deseeded ) , 1 tsp Garam Masala , 1 tsp Haldi powder, 1 to 2 green chillies finely chopped, Some chopped coriander leaves . 1 tsp Jeera. 2 Tbsp of oil. Method. First we need to prepare the cauliflower & the Palak. Cut the cauliflower into medium size florets , Bring some water to a boil, add ¼ tsp turmeric powder & some salt and add the cauliflower and cook till its just done and crunchy , DO NOT OVERCOOK. Drain and keep aside. Boil / Steam Palak and then immerse in cold water for 15 mins. Remove the stem portion and finely chop the same and keep it aside. Grind the leaves with 1 clove of garlic and keep aside. Now heat the oil in a kadai , add the Jeera , after a minute add turmeric powder and then add the garlic, ginger, chillies and onions and sauté well. Then add the palak stems and the cauliflower pieces and sauté. Add the tomatoes, salt and garam masala and the palak paste and sauté for 5 mins with some water depending on the amount of gravy one needs.
When done serve garnished with coriander leaves. An excellent dish with Rotis or even pulao or steamed rice.
