I use these tips in my kitchen and its helpful for me.
If salt is more in curry you can put some tomatoes in it and it will help to reduce or you can keep some cooked rice in clean cloth and wrap it and put it in curry for 5 minute, It will absorb also.
For making curry more thick you can use some rice powder or cornflour on it. Mix any of this in hotwater and pour in to curry.
While making kadala curry you can grind some kadala and mix in curry to make thick gravy.
Use chicken stock for making biriyani makes biriyani more delicious and nice smell also.
If you think curry is more spicy then add some potatoes in it .
While grinding for dhosa batter please add one cup of cooked rice to make it more softer.
While making payasam or any other sweets please add little salt to balance the taste of sweetness.
For getting payasam a pink color and creamy constitency please make sugar caramelized and use that for payasam.
