Simple joy of baking

If you have read my previous post, you will remember that I have some severe sleep issues that frequently force me to get up between 4am and 5am! I don't work, I don't have kids, and I don't watch much TV. So what do I do at this ungodly hour? I can clean the house, but I am allergic to vaccum cleaners :P Dirty houses tend to have a personality, whereas their clean counterparts lack soul (now, you do realize that I am talking nonsense just to get away from tidying the house, right?)


Hence, I decided to use this opportunity to perfect my baking skills. The very act of measuring and mixing soothes me. Of course, I won't claim that my concoctions are palatable, but I have been told that they aren't too bad either (fat praise from my husband. ey?). I enjoy the sight of all the ingredients coming together, and take pleasure in the fragrant aroma that wafts through the entire house. This is perhaps the only time when I am not depressed or edgy.


Today's menu included Fat free Angel Food Cake, and Walnut-Pecan cookie. The cookie was a failure because the batter spread throughout the baking dish, turning into a sheet cake! However, it does look delicious, and I will definitely ask my scapegoats to try them out!
