Purchased @ Mumbai, Arif Stores - Arife la mould


Bakers know them, so this ones a review about Cream Cheese as shown in the image attached.


Price - Approx 700/-


Weight - 800grams


Texture - Thick, as thick as Gsm margerine, as thick as lilly butter, thick at room temperature, smooth without lumps, but not as smooth and light as amul or kraft cream cheese.


Taste - A slight taste of a cream cheese, but not as salty, is tangy tho.


Ive brought this for Gourmet Cheesecake trials, made a kg > 8X3 cake with it, substituted sour cream with curd, baked it at 200 for an hour, and then 150 for another hour. The texture of the batter became runny due to a cup of curd and 3 whole white eggs.


Baking with a water bath > maintains the smooth texture, people who wish for a crumbly texture should dry bake this, I googled enough to find out, how to bring out the crumbly texture, couldn't find an appropriate suggestion. So I felt the need to post this.


The outcome, is what I wanted, how I wanted, smooth and crumbly, but the taste is not what I expected, that's because of the quality of D'lecta.


Soon I'll be trying with Philadelphia cream cheese @300 per pack of 220grams.
