This is my favourite brand of loose tea that is available in USA. I have been a tea drinker since childhood, so I am a bit picky about the strength and freshness of the tea I have brewed. I feel that Yellow
Label is a bit stronger than Green and Red label, so it has become my tea brand of choice.
I like to use Yellow Label to make good Indian chai. My husband and I drink tea in the morning to wake up, and in the evening after dinner to wind down. I have become quite the expert at making chai, and I find different brands of tea are stronger than others. I prefer a tea that is stronger with fewer teaspoons needed to make my chai strong. For four 8 oz cups of chai, I usually need 6 teaspoons of tea to make it strong enough. With Yellow Label tea, I only need 4 teaspoons for the 4 cups of chai. This is good for me, then I do not feel like I am wasting money always buying tea to support our chai habit.
Making chai is sort of relaxing, and I feel it is a work of art. I put 4 cups of cold water into a saucepan I use only for making chai. I put the burner on medium high. While the water is heating I grate some fresh ginger root and place it in the water that is heating. Sometimes I put some tea masala or cloves in for a change of flavour, but my husband prefers the ginger. Then, when the water is almost about to boil, I add the 4 teaspoons of tea and 3-4 teaspoons of sugar. Once the chai starts to boil, I shut off the burner and let the tea brew for about 3-5 minutes. Then I place my hand held strainer over the top of the tea cup and pour chai directly from the pan into the strainer which them filters into the cup. I add some milk, and I have made my delicious chai. It has the hint of ginger, but the full-bodied flavour of the Yellow Label tea can be tasted with every sip. I recommend this tea for anyone who, like me, wants the fresh brewed taste of strong tea with every sip.
